Understood. My biggest recommendation for the academic background is to pick up a copy of the Society of Wine Educators CSW book and workbook. They are thorough, yet concise and will provide a great base knowledge. For the service elements, spend some time watching the videos on GuildSomm. The biggest thing you can do to increase your understanding, though, is taste, taste, taste. If you use a systematic approach to tasting (whether that is one from the CMS, WSET, SWE, or other organisation), you will start to form your own understanding of the various types of wines out there.
When I took the WSET, I actually purchased the CSW Workbook and used their blank maps. Helped me! Used transparency paper and went over everything over and over. Cost me like $30, well worth it for me.
