Bayesian Data Analysis and Hoff are both well-respected. The first is a much bigger book with lots of applications, the latter is more of an introduction to the theory and methods.

Chapter 10 in Hoff's book A First Course in Bayesian Statistical Methods deals with the Metropolis-Hastings algorithm and related algorithms. It includes a simple implementation of the Metropolis algorithm that you may find illuminating. A similar example is in the PDF The Metropolis-Hastings Sampler in R.

This is the book that my Bayes course uses.
