This is a good book that will give you easy, fairly cheep recipes. I LOVE it.

Somebody gave me this book as a jab once. I never tried any of the recipes but most looked relatively nutritious.

It can be a bit daunting, but Mark Bittman's How to Cook Everything is a good resource if they want to learn. It has entries on how to prepare veggies and meats with nice illustrations for every special step required.

I say if they want to learn because many people don't and simply gifting a cook book isn't going to help. If you suspect this is the case, starting with the super simple books put out by food distributors can be good. For example, A Man, A Can, A Plan can be found at most big box stores and can be less daunting than cooking from scratch.

Cooking lessons can also help if you or his brother can help out there since starting from scratch means learning terminology, techniques, and can often appear overly complicated because recipes tend to read as if one small misstep will ruin everything which can lead to serious anxiety..

If they do not cook, I highly recommend picking up a "good" chef's knife, a honing rod, and a set of plastic cutting boards. If they don't have that, they'll probably never bother. A Kiwi knife will run you $5-$10 and is sharp (like razor sharp), light, and cheap enough that if he never uses it you won't have wasted money on it.

You could also prepare them a cookbook. Most everything you're asking can be written in 5 pages.

Baked chicken breasts: Coat with oil, apply seasoning of choice, bake in a 350 degree oven for 25-30 minutes until the juices run clear.

Roasted vegetables. Cut into bite size portions, add oil, add salt and pepper, lay on a baking sheet, bake at 350 until tender (or at 425 until slightly charred).
