Always use a written contract. That doesn't mean it has to be anything fancy! Pre-printed estimate worksheets like this are a perfectly acceptable contract and are super inexpensive. You can get them from Staples or OfficeMax.

When you fill out the form, demand half up front before starting the work. You can say it's to cover your materials or whatever, but really you're getting the customer to have some investment in the project and actually care that it gets done. Make sure to give them their copy.

When you're done with the project and are ready for the rest of the money, fill out an invoice form like this and have them sign it when they give you the money. Give them their copy.

If they decide to stiff you after you've done the work you can walk the proposal, along with before and after pictures, into small claims court and have a slam dunk case.
