I'm a grad student, so maybe I'm biased, but I think a nice canvas in a neutral tone or a leather bag is perfectly acceptable, ESPECIALLY if you live in a major city. If you drive a car all the time, you've got space for accoutrements, but if you walk, you really should carry a bag!
If you plan on carrying anything heavy, ever, make sure you get one with padded straps and the whole 9 yards. It looks a little less professional but when you're walking a few miles wearing it, you really won't care.
I think the biggest secret in not looking like a kid or a hiker while wearing a backpack is minimalism. No crazy prints or colors, no clip straps or ribbons of crap hanging off the front, and so on. Choose a heavy canvas or leather rather than a thin synthetic shell. Quite a few good choices here. I wouldn't even question a really basic canvas bag, like a classic Jansport or Amazon's version of a Jansport. Just mind the colors.
That said... you live in a city! A large, wearable bag is basically a must. And you're about to get knee surgery. It's perfectly understandable if you have a backpack, ANY backpack, rather than a purse.

We got the Amazon basics backpack for under $20 and it's great. Good number of pockets and fits a handful of diapers, changes of clothing, and folding changing pad. No insulated place for bottles but we usually pack a bottle with powder already measured and a separate bottle of water.
Like some others have pointed out: you don't need too much stuff in the bag because you won't be out for that long. We haven't left the house for more than a few hours. Normally we only use the bottles we pack. I would advise against anything too big or bulky bc you might find yourself skipping it altogether.

It's really cheap, looks nice, and has held up for two semesters without any signs of wear, and I carry a laptop around sometimes. Be aware, the laptop slot is small, and not that padded, but I fit a 15 inch gaming laptop in it.
I have "black" which is actually a charcoal and brown. I get tons of compliments on it. The coffee color looks nice too but I don't have experiecne with that one.

If I were you I would get this backpack https://www.amazon.com/Amazonbasics-Classic-School-Backpack-Black/dp/B013TGEJEE that can hold a lot, has 2 water bottle and some kind of laptop sleeve. It is surprisingly very good for that price.
AND I would wait for the GR2 to be back in stock, since it is the one that best fits your needs!

Jansport Super Break is the brand name classic. Style is common the world over it will blend in anywhere and look good with anything, Jansport is THE brand for basic affordable backpacks BUT it does lack a bottle pocket.
Amazon Basics also has their own take on the bag, Pretty much the same bag with no branding and a bottle pocket.
Both are ~ 19-20 Liter. Ultra generic, good looking, and can blend in anywhere. They're almost too generic, throw some patches and buttons on it to make it pop and you can blend in anywhere.
