A couple more quality anthologies would be Seriously Funny: Poems about Love, Death, Religion, Art, Politics, Sex, and Everything Else, Staying Alive: Real Poems for Unreal Times, Contemporary American Poetry: Behind the Scenes and for some more experimental stuff if you're interested in that: American Hybrid: A Norton Anthology of New Poetry
Poets I'd highly recommend include: Dorianne Laux, Steve Kowit, Kim Addonizio, David Kirby, Campbell McGrath, Nick Flynn, Nick Lantz, Kay Ryan, Denise Duhamel, Adrian C Louis, Yusef Komunyakaa, Brian Turner, Heather McHugh, Thomas Lux, Frank O'Hara, Gary Snyder, Charles Harper Webb, Bob Hicok, WS Merwin-- and if you're feeling like a little more 'complex': Dean Young, Ben Lerner and Kevin Prufer. It gets way more experimental than that but
Check out some poetry anthologies. Something like "American Hybrid" could be a good place to start.

It traces the movement of what they call "Hybrid Poetry," (essentially, experimental poetry with formal characteristics) in the 20th Century. Good introductory essays by the authors as well. I'm less swayed by your type of poetry than more conventional forms... but that's something I'm working on.
