I'm not sure where you're drawing the "philosophy" line, but bees and ants come up a lot in the the context of many areas of complexity theory, including in foundational work. Social insects make extremely interesting case studies in emergent self-organized complexity. They're able to perform remarkably sophisticated distributed computation via entirely local interactions between relatively simple agents. The best philosophically-sensitive overview that I've seen is Deborah Gordon's Ant Encounters: Interaction Networks and Colony Behavior. They also come up in discussions of biological altruism and its role in social organization or ethics. Philip Kitcher's The Ethical Project makes liberal use of bees as an example.
