How about an under cabinet or shelf mounted toaster oven? It would have multiple uses and not take up counter space:

Unfortunately there's not too many options out there.
Black and Decker sells an under the cabinet toaster oven that may save you some space. Pretty slick looking too. I'm surprised these aren't commonplace from other manufacturers.
Some people have been successful at creating their own wall enclosures for a "built in" style, but I cannot recommend this due the obvious fire hazard.
Other that that, I think you're stuck with a double oven.
