14 hour smoke.
Scored the fat side and did a dry brine, both sides, for ~10 hours, just sat on the counter, with liberal fresh ground salt and cracked pepper.
Rub: Fresh cracked pepper, mesquite, honey aleppo pepper, honey garlic, fresh cracked salt, shallots, brown bourbon sugar, smoked paprika.
Started at 2:30am which is why I wasn't able to get pre-pictures, or even add the the apples. I was going to score and add apples slices along the bottom. Honestly don't know if it would have worked the way I thought.
Charcoal: Cowboy hardwood lump charcoal.
Smoke: Applewood chunks soaked in water.
Temp: hovered around 200-250. The built-in thermometer isn't super accurate but ballpark was there. Also used a thermopro wireless thermometer for the meat. CRAZY helpful. Could be inside doing other stuff and keep an eye on the temp. Just changed the coals when the temp bottoms out/falls a degree. it actually hit 190 when we went to the bar for a beer (I had heaped the pan with charcoal prior to leaving). We were on the last ~5 degrees.
Mods: I have a fan on each of the lower vents blowing in to keep the temp high. Aftermarket coal pan that rests on two bricks to keep the coals at "fan" level.
Looking at buying a Dyna-glo offset vertical char smoker to replace my shit-version of this. Any thoughts would be appreciated.
P.S. - Might buy some thermo tape to fix the leaks in the meantime. Any brands would also be appreciate.
