If you are looking for a good-for-everything watch, you have a few options. If you are looking for an automaitc watch (no battery, purely mechanical) you really can't beat the SKX007. It has excellent durability, classic looks, and the lume (glow stuff on the dial) is excellent. There is no battery to die, although you may need to get it services in a decade (or get a new one). Leave it on the bracelet for a sporty everyday look that can go with a suit, to a wedding, or a funeral. Throw it on a NATO strap (how I wear my watch every day) for comfortable everyday wearing. Get different coloured straps for different things, and change it up. A new strap can make it look like a totally different watch.
If you want something that will do almost any occasion without a mechanical movement, basically any Citizen Eco-drive will do the job. I myself like the Citizen Nighthawk, although it might be because I'm a pilot. The slide rule on the outside is great for addition/division (how much to tip, how much tax, etc.) and it will tell a second time zone.
If you are looking to make a statement, there is nothing that tops the Seiko "Orange Monster". This thing is built like a tank, the utomatic movement is proven, and the lume is out of this world. It also comes as the "Black Monster" if you want to be a bit more subtle.
If you are looking for a dress watch, I would recommend the Orient "Union" as it has a durable, in-house movement and great looks.
If you are looking for something badass that will be great for nighttime, there is the Traser Code Blue. It is a very durable quartz watch designed for military operations. It has vials of tritium (hydrogen with two neutrons) and will glow without any exposure to light for at least a decade.
If you are looking for a digital watch, I would recommend either the Casio Mudman if you are looking for a large, indestructable watch (That is also allowed for space travel by NASA) or the Casio F91W which is much slimmer, but less durable.
Possibly one of the best deals in "stylish" watches is the Timex Weekender. The come in a million different colours, have an electric illumination, and are very stylish and durable.
My advice would be to get the SKX007 on the bracelet, and then grab a few NATO straps. I have had great customer service interactions with Clockwork Synergy. Their straps are of decent quality, and their service is second-to-none. If you have a little cash left over, grab the F91W for chores are hiking, or anywhere you may need a stopwatch and illuminated face (i.e. Flying).

I'm glad to see someone on here that isn't automatically suggesting some flieger styled auto. Yeah they're awesome and have a history of being a pilot watch, but honestly something quartz is much better suited for actual flying. I'd recommend something like a Citizen Nighthawk or a Seiko SNA411. Recommending an automatic old school flieger to an actual pilot is sort of like recommending an M1 Garand to a modern infantryman.

I'm a groomsman in about a month and I'd be happy with any of these choices.
So many ideas after looking though this. So far I have a few watches in mind that I can easily buy and probably will.
I currently own a Maratac Pilot 2013 Large and I had a Vostok Amphibia (which unfortunately broke and I got a refund), and various other quartz beater watches (Weekender, etc). So I am thinking I should maybe just save up some money and buy something nice than what I have. In the future I'm definitely looking into a Stowa Antea, Omega Speedmaster and possibly an Omega Seamaster Aqua Terra Mid.
I don't really know about flight computers or anything, but I know the Citizen Nighthawk has a slide rule and is very popular. Also the Navihawk or maybe the Seiko Flightmaster

I've used a Citizen Nighthawk Ecodrive in the field for near a decade now (8yrs).
I have the one with the stainless bezel. I actually swapped the metal bracelet to a rubber one when a mountainbike crash broke the steel clasp.
It has large, easy to read numbers for when I'm doing timing for sample collection or something and the night number (tridium?) work well.
Also comes in all black too.
Well priced for a quality watch, no issues and never had to charge/repair!

it's unfortunate you don't want a Citizen, because the Nighthawk paired with a leather band seems perfect for your use case. Automatics in the sub-$500 range aren't going to be accurate anywhere near the eco-drive movement, and the solar charging means that it'll be far more dependable adventuring outdoors (autos tend not to like bumps and shocks, especially inexpensive autos).
I own the Timex Allied Three GMT and it is a decent watch, but not great. I bought it primarily as a travel watch. The dial finish is always sort of mediocre on these, but that is due to the indiglo. It is a quartz watch, and the top pusher advances the 24 hour hand.
As NginOP mentioned, I think one of the coolest automatic GMT models is the Orient Polaris. It looks amazing, and is a watch that can be dressed up or down depending on the strap ( there have been a few posts here on it as well ). Seiko makes some interesting Kinetic GMT watches ( kinetic is quartz charged by a rotor ). There are a bunch of these SUN033P, SUN035, SUN041, or my favorite of these, the SUN037. These hover close to $200.

There are some Citizen Eco-Drive ( solar quartz ) models that are worth a serious look. I own a Citizen Nighthawk, which is really a dual-time. There is a 24 hour on the interior of the dial ( it is the one with the planes on the ends ), and the hour hand can be set independently. and it has a jumping hour setting, so you can quick-change the hour. This is on Amazon for about $220. The Citizen Calendrier is a world time, and super cheap right now at $180 ( the price fluctuates wildly on this model and it was $340 a month ago ).

Used to wear it a lot more than i do now, just sitting in my watch box. I bought it new about a year or so ago and immediately took it off the bracelet, so it is still new quality. i have the box and instruction manual for all the functions, which i actually used! When i bought the watch i was working as a flight instructor and the slide rule was quite useful. no scratches on the crystal that i can see, light wear on the case, band is brand new quality. i got it new, on sale for $250.00 looking to sell for $170.00 shipped to the US.

There are also other Citizen chronographs that aren't pilot-watch-specific. Some of them will cost less than $200, but at this point, I'd consider a G-Shock Aviation series. Specifically, the GA-1000-8A (I like the colors, but it comes in several other flavors).
EDIT: I see you were looking at the G-Shock already. It's pretty cool looking - and durable.

The Citizen Nighthawk is pretty unique looking, but I don't know how well it'd go with a suit.
If you really want to be unique, go with a brass/bronze watch. They start off a nice brown color, but they'll patina as they age. Some that spring to mind are the Armida A7, the Armida A8 (sold out, unfortunately), and possibly the Maranez Bangla (sold out, unfortunately).

I'm a fan of the Citizen Eco-drive, and many have classic faces. The Eco-drive is solar powered, can go months without charging, and with a low charge, makes the hands hibernate to conserve power while it still keeps tracks of the time.

There are several!
The Christopher Ward C60 Trident 300. It's the quartz version of what I personally feel is one of the best Diver watches on the market.
Casio MDV-106. Another quartz diver, and also pretty inexpensive!
Actually basically any Casio watch. The F91W, the A158W, CA-53W, any of the Edifices, etc.
There are also a tonne of quartz Seikos out there. I can't think of many of the top of my head, but like all Seikos, they're great quality for a decent price.
If we can bend the rules to include Solar watches, that opens up to both more Casios, as well as Citizen's lineup of watches. My personally favourite is the Nighthawk (A pretty cliche choice, I know), but they have watches in so many styles, include dressier ones. Another Neat one is the Altichron which has a manual compass and altitude display.
That's also not including more high end Quartz watches, such as the Seamaster 2541 that Pierce Brosnan wore as James Bond in Goldeneye (I know that piece is no longer available on Omega's website, but it's easy enough to find secondhand).
So basically, I think I'd be okay lol
Take a look at the Citizen Nighthawk or Skyhawk. Extra points for the badass Blue Angels model.
Of course, if ana-digi is too much and you want strictly digital, then G-Shock or Suunto all the way.

As mentioned elsewhere in this thread, you need to decide what you are looking for in a bit more detail. Is it a particular look or style? Is it an automatic or quartz movement? There are a lot of options even once you get these two aspects narrowed down. You can always buy the watch and strap separate as well, to get the combination you are looking for.
I personally have a Citizen Nighthawk on a black Hirsch Liberty strap and a Citizen Eco-Drive with blue hands on a brown Hirsch Liberty strap. These are very likely much cheaper than you are looking for as a grad gift, given the $700 limit listed, but the Citizen Skyhawk is closer to your limit and is really nice too.
When it comes to automatic movements, it will be quite easy to get to the $700 limit. Hamilton is a favorite, with both the Khaki Field and the Jazzmaster being good possibilities.
My only advice is to stay away from "fashion" brand watches. A little reading in /r/watches, particularly the buying guide and sidebar, should help you a lot.

Have both, they have different appeals.
For example, I like my Eco Drive as a very clean thin dress watch on a bracelet. The Chris Ward equivalent would be a Malvern Slimline, which is $350 but automatic and thicker at 9mm instead of 5mm.
Other simple comparisons - for a generic dress watch the $175 C5 Malvern (quartz), $350 C5 Malvern (Auto), and $140 Citizen Eco Drive. Chris Ward will come with sapphire crystal, better presentation/warranty, a much better bracelet/strap, but a 20% higher price tag. Also the automatics have a transparent back to see the pretty movement.
For sport watches you have the famous $230 Citizen Nighthawk, the $220 Citizen Speedy Style, the $250 C7 Rapide (goes on sale ~$275), and the ~$250 C8 Flyer Quartz (goes on sale~$275). Once again, CW comes with sapphire quartz, 5 year warranty, and better bracelet/strap. But you also have to wait for one to go on one of these clearance sales for the good prices.
Divers, $250 C60 Trident vs $200 Citizen Promaster. Trident looks more traditional, following the Omega Seamaster design, comes in 38mm and 42mm, sapphire crystal, and can come with a nice bracelet for ~$50 more. For reference, a new bracelet for the Citizen will be upwards of $100.
Both brands have their own unique watches, with Citizen having more very different designs. Instead, Chris Ward has a few core designs where you select a different movement (auto vs quartz), face color, leather strap or bracelet, and size (generally have something like 38mm vs 42mm or 40mm vs 43mm). Chris Ward designs tend to be cleaner, but there are fewer.
Of course it comes down to preference. Chris Ward will be a bit more expensive, but higher quality (sapphire vs mineral, Swiss movements vs Japanese, etc). Citizen will give you more unique options to pick from in terms of design.
If someone wants a traditional watch (Diver, speedy style, clean dress watch) I first point them towards CW if they're willing to spend $150-$350. If they're looking for a Pilot then the Maratac Mid Pilot ($250 sale price), CW when on sale, or Laco if they want some pseudo history. However under $150, first instincts are Citizen and Seiko. Obviously this is just the initial recommendation, and any variety of preferences can change the follow up.

I have the BM8475-00F with an all black 5-ring NATO (for the times when I feel like a keyboard ninja). It can be a little hard to read in dim light though, so your choice of 26E is probably wiser.
However, my favorite Eco-Drive of the moment is the Nighthawk (slide rulez!). I know that the price dips to around $200 so it was a matter of waiting, and managed to snag it recently. It should next dip again during the Black Friday period.

I'd recommend the Citizen Nighthawk. I don't know of one owner who didn't love theirs.
Within that price range, you can consider an Eco-Drive with a little more style or features. For example, a chronograph or a second time zone and a bezel that's a slide rule, or something that just looks like a pilot watch.
Nobody seems to have noticed that the watch with the three subdials has a slide rule bezel. The slide rule is rendered very photorealistically, suggesting that it's rendered from a photo of a watch.
To my eye, the slide rule bezel looks like a Citizen or Casio slide rule watch (which look suspiciously similar, as if the two companies' slide rule bezels are from the same source; the Seiko ones look different).
EDIT: compare to this Casio Edifice, to this Citizen Nighthawk. Here's a Seiko for contrast.
I don't have a particular model at this moment, but check Citizen. You can get a well known model like the Night Hawk that is a few mm wider, I know. But perhaps you can get one in titanium with a sapphire crystal, such as this, not a proper diver.

If he's not a watch guy, you generally want to go quartz. He'll probably hate the watch if he takes on off on a Friday and finds it dead on Monday. I can't think of much:
You cannot go wrong with a Seiko 5. Absolutely beautiful watch, automatic, and very trust worthy. Just don't fall for a crappy Invicta.
Edit: You also can't go wrong with Citizen watches. I'm not a huge fan of them, but my old chief used to have the Citizen Nighthawk and it looked great.

My favorite Citizen is the Nighthawk. It's got the same slide-rule system that this one has (which lets you do unit conversions, calculate fuel mileage, arrival time, and also all kinds of arithmetic by rotating the crown on the left, which rotates the outer bezel inside of the crystal) , but ditches the Chronograph function in place of a really cool and intuitive dual time zone/GMT hand. In addition, it's a bit more water resistant and suitable for just about anything short of saturation diving. It's also a really nice, timelessly-styled piece that's probably always going to look cool.
 
I own several Citizens and they are without question great watches. Think of them and Seiko as the Honda and Toyota of timepieces; while they lack the cachet of European brands (TAG Heuer, Rolex, etc), they make up for it with extreme reliability and build quality. Their highest end pieces have legitimately comparable build quality and features to those brands for thousands less.
 
As far as Citizen Eco-Drives go (as opposed to mechanical self-winding watches, which are more expensive and ironically less accurate), they generally are bulletproof and maintenence free, with a lithium-ion battery that does not require service for 20+ years in most cases. They tell time with excellent accuracy (I have one that only deviates a few seconds every three or four months) and are about the easiest watch to own, as they charge themselves without any special action required.

I'm not sure if he wears/needs a watch but my wife picked this up for me recently and I LOVE it!!! It has a secondary 24 hour clock to set for zulu time (the hour hands for it are planes) and a built in E6B (flight calculator for time, fuel, speed, etc.). I've never met a pilot who has not admired it.
Edit: my wife just told me that after adding this to her cart and checking out on Amazon the price dropped another 20%, not sure if the sale is still active or not but it puts it closer to your $200 goal. Good luck and let us know what he ends up getting!!!
