plug the power supply & network cable into some kind of device (this and this), that is suspended over the mineral oil container, that should prevent getting seepage on the floor.
Can also get these little 8" extension cord cables (sometimes they call them wall wart savers or something like that) to get the one spot to fit.

It's a tiny bit cheaper to make them this way than to have an extra bit of cable between the transformer and the plug. Meanwhile, consumers lose two or more outlets on their power bar or wall plug.
Mini extension cords like these are really helpful for these (but I'd rather not have to use them).
They make little 3-inch extension cables. Eliminates the problem of one adapter taking up 2 spaces. We use these all the time.

I've used older versions of powerline, which could do about 10-15Mbps with a reasonable amount of latency - around 5-10ms RTT.
As far as gaming is concerned, as long as you aren't the gamers equivalent to high-frequency trading needs, the additional latency (even with older tech) isn't going to be your worst problem.
The only thing to remember is that you don't want to plug your powerline devices into surge strips/multi-tap hunks of crap. They need to plug straight into a wall socket. It this is a concern (they're giant wall-warts), you may want to look into purchasing a super short extension cord.
I've seen (own) very short 3-prong cords from computer store intended for when you have a power brick needing to fit into pc power strip. Maybe 6"

Because it costs less.
They could put a small cord on it that leads to the power brick, but that would add a few cents to the cost of the item. Multiply that by a few thousand, and it adds up.
