Also there is a comic that resolves the cliffhanger in Darth Maul's storyline titled "Darth Maul: Son of Dathomir". The comic itself hasn't been reprinted for some reason so it's extremely expensive but you can definitely find somewhere to read it online.

Plus a novel that continues the story of Asajj Ventress titled "Dark Disciple". It's a solid book and well worth reading IMO. I only became a Star Wars fan in 2015. Since then, I have watched all the movies, read most of the books and comics, am up-to-date with Rebels and watched The Clone Wars at least three times. The only memory I have regarding Star Wars before is of renting Revenge of the Sith in VHS, skipping half the movie and being scared of Anakin.

 

But if you are to show it to someone new, definitely show it in release order, and I'd actually recommend the Special Editions. Don't say beforehand what you think of them, let them form their own opinions. That's how I went from hating the prequels to kind of liking them to then having Revenge of the Sith be my favourite. If it doesn't connect with them like it did with me, don't force anything.

 

That said, feel free to talk and discuss the movies with them, maybe explain some things they might not understand. Considering most people I come across, even long time fans, only really watch the movies, I don't know what kind of fan you are. But, if she lives close to you and you know each other well and have the time, I'd actually recommend watching the entirety of The Clone Wars series before watching Revenge of the Sith for the first time. Had I done that, I believe I'd have appreciated RotS much more in my first watch.

 

And if she's a fan of... words, then maybe recommend some books later on too, especially since now they are all cohesive, have no continuity issues, are all canonical and are actually legitimately good books. The Clone Wars is the perfect gateway to the EU, since Dark Disciple (novel) and Darth Maul - Son of Dathomir (comic) are all part of it. Here's how I'd introduce them to the series:

That's the way I successfully introduced two friends to Star Wars. They're really close friends, so discussing and talking about things like this weren't an issue. If it is to you, finding a way around this might be worth it.
