I spent a long time looking for this unicorn of a device about a year ago, and ended up compromising.

I got a Crane Drop humidifier and plugged it into this humidity-controlled switch. The special switch is a bit pricey, likely because the manufacturer (Dayton) focuses on the industrial market with their products.

Wine fridges usually operate in a ~45-55 degree range which is a perfect temperature for curing meats

Add in a better humidifier controller such as
