I love this chickpea curry , hot for food's chop salad , one pan Mexican quinoa.

I love morning bagels with avocado, sriracha, and nutritional yeast (get that b12!).
Obviously wraps/burritos are very easy as well as soups.

Meal preps with quinoa, veggies, fruits, etc sounds like it'd be good since you're probably going to high school.

You may want to look into B12 or Omega 3s supplements. It depends on your diet. I take the Deva Tiny Tablet just to make sure I get anything i perhaps did not (but it acts as help, not my main source).

Hot For Food, Oh She Glows, and It Doesn't Taste Like Chicken are usually my favorite sites. I do like Pinterest and I have an entire board of categorized foods.

Definitely make some for you family and show them how good vegan food can be!

i get as much nutrients and minerals as i comfortably can from food, and just take a multivitamin and an omega3 supplement to take care of anything i don’t get. super duper cheap and it’s only 2 small pills per day which is easy. makes life a lot easier not worrying about if you got everything you needed that day. always pay attention to your nutrients and minerals, but always supplement so you don’t have to kill yourself over it.

The way we make change with veganism is by taking our money away from people who exploit animals and by raising awareness, so if I have an accident, and if fixing it wouldn't take back the money or improve people's regard for veganism, I just forgive myself and let it go. If I dispose of the non-vegan thing instead of consuming it, it's mostly just because I feel icky about it.

I recently went vegan after being vegetarian for a few years. It was hard at first to think of what to eat, but the breakthrough that made me feel better about it was reminding myself that I can still eat whatever I'm craving in some form or another. I try to imagine exactly what I would want for dinner if I weren't even vegetarian/vegan and then I google "easy vegan ___." This has led to some great things like vegan eggs benedict (yum). You're working to help animals, so you've got to make it fun and treat yourself.

I also take a vegan multivitamin and B12 supplement so that I can eat whatever I feel like without worrying so much about whether I'm killing myself.

Not that it really matters if you're diet is well planned, but it seems like her whole argument relies on someone not being able to afford a daily multivitamin (6 month supply on amazon is $13). If you can afford $26/year, then by her own logic, you'll be fine. but always be healthy, eat a variety of whole foods, take a b12 supplement and track your nutrition in cronometer.com.
