A Network Tap and maybe a book on Wireshark would be an invaluable tool. They are a bit pricey though.

This is my favorite network tap device:

Can be powered via USB and super simple to use. You could cap off of that onto a RPi but I'm not sure how much storage you'd have access to there. Consider capping only packet headers (if applicable) and using a ring buffer (but you have to be able to get to the device quickly).

So I was looking for one on Amazon and found this, I want...

I bought one of these:

It's a switch, it's 10/100/1000, POE pass-through, USB powered and has a mirror port.

>I want them to absolutely LOVE it, but don't really know what to get. I'd say my budget is around $200

Did someone say 1000BaseT Network taps that are USB-powered?

Also, incident responders tend to burn through portable hard drives - especially the ones that are large enough to take full disk images. They also tend to need Cisco console cables (which are usually free) at the worst times.

This would probably work. I use this at work all the time to tap into networks to run Wireshark on.

If OP wants to stay with copper, OP could use 1 mirror port destination and a copper tap on the monitor port's cable:
