A Network Tap and maybe a book on Wireshark would be an invaluable tool. They are a bit pricey though.

Can be powered via USB and super simple to use. You could cap off of that onto a RPi but I'm not sure how much storage you'd have access to there. Consider capping only packet headers (if applicable) and using a ring buffer (but you have to be able to get to the device quickly).

It's a switch, it's 10/100/1000, POE pass-through, USB powered and has a mirror port.

Also, incident responders tend to burn through portable hard drives - especially the ones that are large enough to take full disk images. They also tend to need Cisco console cables (which are usually free) at the worst times.

This would probably work. I use this at work all the time to tap into networks to run Wireshark on.
If OP wants to stay with copper, OP could use 1 mirror port destination and a copper tap on the monitor port's cable:
