In Knoxville:
http://www.cityofknoxville.org/greenways/ - in particular, if you live in west hills, you're close to Jean Teague Greenway, which now connects to Ten Mile Creek Greenway. If you're willing to drive a little, head to Earthfare in Bearden and you can pick up Third Creek Greenway.
In Oak Ridge, http://web.eecs.utk.edu/~dunigan/greenways/
North Boundary Greenway provides a pretty long run if you don't mind gravel road instead of paved. I can only do short runs these days, and like to stop at Melton Hill Dam after work if I go home via 95. Google "melton hill dam" and it should pull up on maps.
I always recommend this book to folks who are new to the area: http://amzn.to/1g81TVK. It covers a lot of places you can run as well as hike.
