Yeah i got my sealer for like 50 bucks and it seals while vacuuming been working pretty well so far.

Thank you for the detailed response. For my first sealer I don’t mind going with an affordable machine. I’m looking at a Geryon product which is an amazon choice. Any thoughts on it?

Anova is good, I bought it when it came out years ago, still going strong. There's a new version coming as /u/gctep pointed out.
Also, I use this as a vacuum sealer, FoodSaver is way too expensive for the same features.
I just sear my stuff on the grill if it's going, or most likely in a cast iron on the stove.
And container is good, really anything works. I have a giant metal pot someone gave me for cooking Thanksgiving sized portions of potatoes.
