I'd recommend watching the first movie, Ghost in the Shell, then divake your way through just about anything else.ing into the Stand Alone Complex series and 2ng gig, then anything else you want. Avoid Ghost in the Shell 2.0, as while it's not bad, it's not the sequel, it's just the original movie with some redone CGI and a yellow tint to everything that mutes some of the colors.

Something to keep in mind is that most of the different incarnations of the GITS series are different interpretations of the stories in the manga, a bit like what is done with the Batman movies but without retreading over the same ground every time. i.e. Stand Alone Complex and its OVA's (Laughing Man and Individual Eleven are the main stories of 1st and 2nd gig respectively cut into their own separate movies, I'd recommend watching The Laughing Man if you find yourself getting bored of the stand alone episodes in 1st gig) takes place in a universe separate from the movie.

I have the english version of the manga and the only censoring there is a removal of a 3 page lesbian sex scene between Motoko and a few female friends of hers that Batou interrupts with a call. From what I understand, this is the uncensored version.

Get DMZ by Brian Wood. It's about life in Manhattan (which is now the DeMilitarized Zone) after the US drops into civil war. It follows Matty Roth, a journalist intern who quickly becomes pro when he gets trapped on the island. I recommend the trade paperbacks, of which there are currently seven.

Also the Ghost in the Shell trade paperbacks, and The Dark Knight Returns trade paperback.
