You would still have fun, but you'd be missing a big part of the story. Plus you can get I and II in HD for for around $20. It's worth it.
this man is correct. get the HD collection (I and II on a single disc). it doesn't look as good as III, but well worth playing.
there is also the Origins Collection, which is the PSP games. I haven't played it, so I don't know how well it ported, but the games are also worth playing.

Yes! The Uncharted series is one of the best and most accessible on the PS3. Stunning visuals, awesome voice acting and animation, classic action/adventure plot - it feels like you're in an Indiana Jones movie! The games are very entertaining to watch too.
Another amazing adventure series I would also highly recommend: God of War. It's an epic and fascinating story that immerses you in Greek mythology. It's pretty gritty and gory, but really an incredibly fun game. The first two games were for PS2, but they were re-released in widescreen as a bundle for the PS3.
Other games I think you'd like: Infamous (scifi/action/adventure), Dead Space (scifi/horror/adventure), and Assassin's Creed 2 (historical/stealth/adventure).

It's stupid that those 2 GoW games are still exclusive to PS+. I don't understand what point there is in keeping it that way, especially since each game is priced higher than the collection. You missed last week's sale where the two games were $10 together.

It seems like the voucher in the GoW Saga expired on March 31, so that means you won't get the Origins games unless you call Sony and have the receipt.
