Answering my own question, now that I'm home and can check YouTube.
At around the 4:00 mark, you can see the sticks pretty clearly in this Taki Udon video. They're not as short as I thought they were. They're basically a slightly more compact looking version of the Adafruit stick.
I think, if I /really/ want L3 and R3, the lowest profile off-the-shelf part is probably the Nintendo Joy-Con thumb stick. But I think the easiest to solder will be the PSP 1000 series stick.
