Since you seem to be looking for completely wireless lighting, I'll bring the "Gravity Light" to your attention. It uses a ~25 pound weight to drive a built-in generator to light up an LED at 15 lumens. Seems like you can vary the light intensity by changing the amount of weight you use. But it's not really something that can be automated or adjusted much. One warning: 15 lumens is extremely dim by most people's standards - you can get the same amount of light out of a pair of AA batteries.

15 lumens is about what you'll get from one of those keychain lights used to find a keyhole. If that's the max, then this promo image is pure horseshit.

Also, these monitors have no converter. They just run AC I guess unless it converts it within the monitor.

The only other thing I can imagine myself using is a laptop, phone or camera battery charger. Oh! and some sort of small speakers. I work on a lot of video edits where sound design is important. It isn't a "much larger scale" like you imagine, and it may not need an escapement, but it is certainly reasonable to translate energy of motion into power.

If you want to get really abstract, you can imagine a hydroelectric dam as an analog to this, but the escapement concept would be replaced with the small inlet pipe of the turbine.
