The only way to be certain without cutting it open is with a proper meat thermometer, and pick the temperature you're aiming for from a guide.

The meat thermometer I linked was the cheapest one I saw on Amazon, and have no idea whether it's any good or not. You can test how accurate it is by putting the sensor into ice-water, and into boiling water, and checking what it reads. I personally use a different brand of thermometer.
