Not sure if you can get singles. Rockwool is a standard medium though- it's all the same stuff no matter what shape they are selling it in. You can maybe buy a single larger cube and cut it down. Just wear gloves. It's kind of like fiberglass insulation.
They make blocks that fit inside each other, however you don't gain anything unless you have a giant plant that needs a lot of support.
The rockwool does nothing except give the plant something to anchor to so it doesn't just fall over.
