So I’m not sure exactly what kind of information you’re looking for, but there are several books, podcasts, audiobooks and lectures on Japanese folklore and mythology.
My recommendation for beginners is to go to the Myths and Legends podcast and check out some of Jason’s (the host) episodes on Japanese myth/lore.
He has a tendency to link most of his information in the show notes.

It’s a little more, shall we say, “user-friendly” than a generic text book. That should be enough to get you started. But I’m happy to point out more information if you need it.
