The Deadly Deep: The Definitive History of Submarine Warfare by Ian Ballantine covers the entire range of submarine development and warfare, from Archimedes through the Falklands war and beyond.
The two-volume set:
Hitler’s U-Boat War: The Hunters 1939-1942 and Hitler's U-Boat War: The Hunted 1942-45 by Clay Blair, about 1800 pages total, will give you way too much information about U-boats in WW2.
And I trust you have already read the autobiography of Karl Doenitz, who ran the entire U-boat command during all of WW2.
