All of that sounds pretty normal, we let Orion sleep uncrated (he did sleep in a crate up until he was 2 years old but now we can trust him 100% so the crate is optional) and he gets up a few times during the night to change position, have a drink of water etc. We use crate water buckets in our dogs' crates, they work very well.
At 8 months old he should be able to hold his bladder through the night even if he drinks, unless he has a UTI.
How much exercise does he get during the day? My dogs tend to sleep better the more exercise and playtime they get during the day, on slow days it takes them longer to settle down.
I like this kind of pail for the crate one side is flat so it sits flush. They sell them in several different sizes. There is also one that I saw on amazon that has a bracket and screws to hold it more firmly in case Leeroy is a habitual bucket tipper.

These are brilliant. you can use a carabiner on the "handle" part too so that it is more secure. We use these in the outdoor runs and our brat hasn't managed to kill his yet! (we have outdoor runs for our large dogs when we want them to have more space, but not get up to mischief!).
