I use this J-Tech adapter. If you have a reasonable power adapter for your chromecast, it doesn't require its own power supply for audio-only applications.

There are other adapters but since I was still using HDMI in my setup, I needed the J-Tech gear originally.

You can just get one of these guys for $30, it will extract the audio for you out of the hdmi cable into a 3.5mm port:

I have this one myself, I just use a $2 RCA to 3.5mm jack convertor cable in addition to it. That way I could use the optical 5.1 out in the future if I wanted to:

I use an HDMI audio-video splitter. The video goes to my monitor, and the audio goes to my speakers through a 3.5mm input. Here is the one I bought.

I think you may be in luck op. I wanted to use my chromecast with wireless headphones as not to disturb the house when I watch tv late at night so I got a hdmi audio extractor. Interestingly when I tried it out, not only was I able to pipe audio out separately but the tv also still had the audio at the same time. I've been able to cast pocket casts to the headphones without even turning the tv on which is really handy. Hope this solves your needs!

You could run a 3.5mm cable from the controller to the laptop, which would look weird.

Naw, man. Here's what you do. If your monitor has a hdmi in for your wii, it might have a 3.5mm sound output jack. Buy a male/male 6 foot 3.5mm cable ($6), put one end in the monitor sound out, and the other in your pc's line-in. Now you have wii u audio coming in through your pc. If you don't have that, you can buy a hdmi audio extractor that will allow you to do the same thing.

OR, you can just use the cable attached to your pc with the headphones port on the gamepad but that looks bad. Or you can just use headphones with the gamepad.

Finally! Someone who gets the "Why not" philosophy!
For Wii U games, I used this and a spare HDMI cable to split the video and audio so I could hook up an external speaker for the sound.
I also bought a preowned Wii (for GameCube games) for which I bought a similar splitter (that plugged directly into the back of the Wii) to get audio for that one.

That might not work. First of all, its the male HDMI end instead of the female HDMI end. Second of all, it may not be HDCP compatible, so the Chromecast might not be compatible with it. Try looking around an amazon for something like this and get an HDMI to DVI cable to connect to your projector. Finally, some versions of DVI carry audio. I don't remember which and it probably wouldn't work through an HDMI adapter cable anyways, so better off the use the 3.5mm coming out of the linked device.

HP Pavilion 21.5-Inch IPS LED HDMI VGA Monitor. I really lucked out with this one because the screen pops easily off the stand which in turn breaks down into two pieces that fit perfectly in my bag. Was a nice surprise.

EDIT: Crap. Again, forgot to mention that since the monitor has no speakers or headphone jack I picked up this Jtech HTMI audio extractor that I can plug my headphones into.

if i understand correctly. the new monitor will be connected to a console via hdmi.

most (all?) usbs on a monitor require you to hook up a usb cord from the monitor to the computer.

so no this will not work because just hooking hdmi up to the console will not enable the usb ports.

now you should be able to configure the console to output audio not on hdmi. xbox one you can have audio over S/PDIF to go to a receiver. to do that just do some googling. this is the type of nox you would need
