The Jabra Speak410 works great, but is a little pricey.
Like /u/PhoenixAV said, just get a webcam (I have the same one, it's rock solid), you might need a USB extender (https://www.amazon.com/AmazonBasics-Extension-Cable-Male-Female/dp/B00NH11PEY/ this works fine, would not go much farther)
For sound, I'd highly recommend getting a simple Jabra Speak 410 https://www.amazon.com/Jabra-Speak-Speakerphone-Retail-Packaging/dp/B007SHJIO2/ It's got decent sound for voice, some mute, volume controls. Between that and the webcam, you can support 4 or 5 people on a call and look professional at the same time.

What you're looking for is called a boundary microphone, which are those little hockey puck mics you see used in conference rooms.
Cheap examples made just for your use case would be the Plantronics Calisto 610-M and Jabra Speak 410 which are ostensibly conference call speakerphones, but it's the type of device you're looking for. The MXL AC-424 would be a good USB boundary mic that doesn't need an audio interface.
Just be aware that boundary mics are good at picking up room echo, so thing like rugs/carpet on the floor and soft furniture will help a lot.
If you haven't bought the webcam yet, I'd actually get the Logitech C925e over a C922 as the C925e has the exact same optics and sensor as the C922, but in a better mechanical package (built-in lens cover anybody?) and costs less.

The GVC3200 is a complete "stand alone" SIP user agent and it, some what strangely, even has a built in microphone. The only thing it doesn't have is a speaker. So you need some kind of speaker for output, whether that is a USB, or a bluetooth speaker - and as I said, it does not have to be the GAC2500, it could be some thing like the jabra usb speaker, but since it comes with the GAC2500, I dont know why you wouldnt just use that.
Mostly I was trying to indicate that the GVC3200 itself is a complete SIP endpoint (lacking a speaker) and that it dont depend on the the GAC2500 for any type of "user agent behaviour".

You should have the group pick up a USB speakerphone like Jabra makes in order to get them heard and to hear. Either that or they'll need to all connect separately to voice and sound. We had this problem and the only thing that worked well enough was separate headsets for everyone. You might have luck with the speakerphone idea, though.

For platform, if you use G Suite & have Enterprise licensing, Google Meet is fantastic, as it supports dial-in numbers and up to 50 participants. Also, it has a new hardware kit w/ touchscreen remote:

If you are nor using G Suite, then either Zoom.us or Blue Jeans would be my first pick, with a slight edge to Zoom.
