Cook it like I do:

Start around 11am Saturday, smoke it until 6 or 7pm @ 180-200f
6 or 7 pm: put it in the oven in a roaster pan, covered at 180 or 190f I like this one: http://www.amazon.com/Kitchenaid-Roaster-Pan-Floating-Rack/dp/B0046W4UFY
Pull it out of the roaster pan, wrap it in foil, let it sit for 30mins prior to cutting.
