Use a good recipe. Recipes that call for meat plus a jar of salsa, while quick, are not especially nuanced.

Realize that slow cookers hold in liquid, so if you're winging it, take it easy on added water, stock, etc. You can add more, but it's a pain to reduce later.

A basic slow-cooker cookbook is your friend. Mabel Hoffman wrote one back in the day that is still a very good teacher. The older the copy you can buy, the better. I own 3 of this, different volumes.
