While that may be true to an extent with Jamie Oliver, Anjum really bastardises a lot of Indian dishes by over simplifying them and even trying to merge then with western equivalents. I'm not a fan of hers at all.

I cannot recommend Madhur Jaffrey's Ultimate Curry Bible enough.
Also, it's all about the Dahl baby! It's so quick and easy to make, and I love to let it stand for a day or two, the tastes really comes out and matures/intensifies the day after you've cooked it.

It's a Madhur Jaffrey corander chicken recipe from this cook book, which is my favourite curry cook book there is. This is the recipe and it's about the only curry I've ever cooked where I've not felt the need to tinker with the recipe.
