So I actually do use a tablet for school that I take notes on and actually have written a few of my reports on as well. Honestly, any tablet would be fine (I'm using a Sony Tablet S. not the Xperia Tablet S, just the Tablet S). What matters is the apps and accessories you use with it.

Apps

I study business, so I don't really need to do a lot of writing. Instead, i type most of my notes out on Evernote. When I do need to write stuff, then I'll use Lecture Notes, though there is a free alternative, but I can't remember its name right now.

Accessories

Unless you choose a tablet that comes with a keyboard (Like some of Asus's offerings, you'll want a portable keyboard. There are some case/keyboard hybrids for certain devices like the one for the Nexus 7 I linked. If not, I highly recommend (and use myself) the Logitech Tablet Keyboard for Android. As for stylus, I use the Adonit Jot Pro cos it helps me write in my cursive scrawl better than most other stylii. Of course if the tablet comes with a stylus, use that.

You mentioned getting a Note 8. I personally feel that might be a little small, and I prefer a larger tablet, maybe 9.5" to 10", just cause its closer to paper size, so it'll be easier to write on. So i'd suggest a Nexus 10, or possibly a Sony Xperia Z, and also the Galaxy Note 10.1.

Minisuit makes some great cases for Nexus. This is the one that I have and I love it. The keyboard is a little cramped but the shell design meshes perfectly with the Nexus and it makes me feel that the screen is very protected as a result.

Minisuit keyboard is specifically made for nexus 7 and is the best by far. I have tried logitech, minisuit, and another off brand keyboard. Minisuit is my favorite by far, it also doubles as a compact case for your nexus. I have used it every day since january and have had 0 problems with it. I highly recommend it.

Edit: Also cant beat the price compared to other keyboards

Most people don't see the need. Plus small keyboards are hard to get right. I bought one of these for my nexus7 yesterday - but will be sending it back. It looks awesome, fits the device amazingly, really nicely made. But the buttons are tiny. Far to easy to hit the wrong thing, making the whole thing kinda pointless. And that's 7 inches.

Im now looking at the folding bluetooth keyboards, which can be bigger - although slightly less 'all inclusive'. (Plus point will work with my phone though)

I don't care much for sleek on a phone when a Zerolemon or something similar is available. I have my first Gen Nexus 7 with no case, and I baby my tech, so there's only one little scratch on it after almost 2 years. I've had it since August of 2012 and had a flip cover on it for a couple months when I first got it, because flip covers are cool. but I got a cheap one and it got filthy, so I stopped using it.

right now I've got a Captivate Glide with a Hyperion battery. the phone was already a little bigger because of the keyboard, but I nearly doubled its width to double my battery life. I would easily do the same on a Note 3 with a Zerolemon, which will triple the battery capacity. that's just me though. I'd rather have it be a little bulky with 4 days of battery life on light to moderate usage. that and one of Zerolemon's protective cases will be ideal for me. with a Zerolemon, it's worth the trade-off. but if it was just a case, I don't need it. both of my main devices are unprotected right now. I've thought about getting one of these for my tablet, and I've also thought about getting an Asus flip cover for it. one of the nice ones. as for the phone I have now, cases don't exist that fit over it with the battery. but this used to be my brother's and he's dropped it more than I have and there's not a single scratch on it. not everyone is that careful, and with a nice case, they shouldn't have to be.

what program was that, by the way? I've never heard of such a program. is that perhaps buried in the SDK somewhere?

Although the Shield Tablet would work fine for school, that's not really it's primary purpose. You should look into getting a Nexus 7 and this.
