When using the Lightning to HDMI connector there's not really any perceptible delay - at least not enough that it makes me any worse than I already am at the game. Same for most of other games. Here's the adapter that I keep in my bag along with a nylon sheathed HDMI cable from Monoprice that keeps from getting tangled.
I do NOT recommend playing games like this over airplay, however. If you've got friends around it can be nice to let them see what you're doing, but it's going to be lagged enough that it's obnoxious to play.
