My guess would be slugs. Eggplants are often attacked by flea beetles, but those usually leave a bunch of pin sized holes too. Slugs eat everything....

The best way I've found to deal with slugs is Sluggo, it works well, is easy to use and is safe. My garden is apparently slug central and this is the only thing I've found that keeps up with them.

Bought some Sluggo at another poster's suggestion, after they destroyed my chard. No problems since.

That's really hard to answer without knowing what kind of bugs are eating them.

I know where I live, the main bugs I have to deal with are slugs and caterpillars/cutworms. Sluggo will take care of slugs and BT will take care of the cutworms (both are organic options).

But again, it depends upon what's eating them. There are a lot of bugs that like to eat sunflowers. Slugs seem unlikely because they like shady, wet places (not where you'd usually plant a sunflower). But cutworms are definitely a possibility.
