I have an Oxo Compost Bin that I line with Bio Bags. It has a handle for easy carrying plus the lid pops off and it can all be washed easily (by hand or in the dishwasher).

You can also use newspapers or those yard waste/leaf bags that you can buy in packs of 10 for $2 at Home Hardware for the outside bin. For the inside bin, I bought this small indoor compost bin for the kitchen that has worked great.

I keep my kitchen compost bucket on the counter, by the sink. I think accessibility would help you. When cooking, you can set up your cutting board (or whatever) near the bin so you can easily transfer scraps.

Oxo makes an easy-open/non-latching countertop bin — that might help it “feel” easier too.

We use a litter genie. It's plastic, but not single use, so it's moving the right direction. It cuts down on smell and waste, and makes it easy to clean the box.

I imagine you could use a paper bag if you took it out right after cleaning and had decent clumping litter. Or, a hard plastic bin (like this thing) and rinse/dry frequently.
