What makes a camera "good" for new shooters is the ability to produce high quality images without a lot of hassle.
For that reason, I would avoid traditional DSLRs that lack basic video features such as power zooms and viewfinders that actually work while you're shooting video (DSLR viewfinders are blocked by the mirror when you switch to video mode, forcing you to use the LCD screen in back of the camera - this can be a problem in bright sunlight).
DSLR lenses also have noisy autofocus motors. Even Canon's "quiet" STM lenses are relatively noisy, as seen here in a touchscreen autofocus test I did with the Canon 40mm f2.8 STM: https://youtu.be/CZ-V3KhH_GI

More narrow field of view yes, but with that a lot more zoom of course. The kit lens should be good enough for any landscape shots, and you don't need the large aperture for that kind of shot since you want a lot in focus.
Instead, you should focus on a telephoto zoom lens for when you can't get close enough to something. Instead I think you should get a 45-175mm zoom lens, which also has image stabilization.
Since you're outdoors and likely not doing low light work, you're focus should be on expanding the range of focal lengths you can use with that camera before getting faster lenses. You'll have more flexibility for the shots you can get, and that to me is a bigger deal than having the fast lenses.
I'm sure you've seen those lenses you're looking at recommended a lot, but I don't think they'll provide you with as much benefit for this type of work as you think. They're better for people doing indoor work who need better low light performance and want a nice smooth blurry background due to a shallow depth of field.

You may find the same model with a smaller kit lens. Naturally, you are free to choose which you prefer. Here is the Olympus 45mm f 1.8 and the illustrious Panasonic 45-175mm.
