These scones contain only a fraction of the normal about of butter and instead use courgette, plus have spelt flour, dried fruit and agave nectar instead of sugar. The recipe came from a lovely book about healthy baking called Red Velvet & Chocolate Heartache (http://www.amazon.co.uk/Red-Velvet-Chocolate-Heartache-feel-good/dp/0593062361) which is great for anyone watching what they eat.
I found vegetables do an interesting job of binding where the gluten would usually do it. Like in this cookbook. But I do concede that some of those don't taste so yummy without the icing.
