How about a simulator set? Buy him 1 of these- http://www.amazon.com/Saitek-Flight-Switch-Panel-PZ55/dp/B001EYU1WS Two of these- http://www.amazon.com/Logitech-Extreme-Joystick-Silver-Black/dp/B00009OY9U and one of these- http://www.amazon.com/Logitech-G13-Programmable-Gameboard-Display/dp/B001NEK2GE and if you want to go a little above and beyond, get him an Oculus Rift as well.

After two years of owning the hog my 2c:

Don't bother with any preset profiles. They will never work how you want them to and making your own will help you better understand controls what they do.

Don't bother with TARGET. All it really does is turn two physical devices (your Warthog Stick and your Warthog Throttle) in to one logical device (Thrustmaster Combined) that Windows sees. It does this all in an absolutely shite interface.

Just don't run TARGET and bind the axis and buttons in War Thunder directly.

If you are looking for inspiration this is my minimal hog bindings. Not bound are pitch trim for which I use a wheel, engine start & landing gear and MEC via some levers.

DSD has a bunch of designs

You could use Thrustmaster MFDs with custom inserts.

Saitek has a few different panels as well.

Xkeys if you need more buttons than you know what to do with

Saitek makes something along those lines.

You could probably find a simple enough DIY build using an arduino or something similar.

Roughly $6000.

The biggest ticket item was the GTX690 ($999), and the three monitors ($324 each). We have about $1600 into the rest of the PC (512g SSD, 3.9ghz Intel Core i7-3770K, 16gb 1600mhz RAM).

The Saitek components are pretty reasonable, the FIP displays add up though. Here is a table of my spreadsheet, it doesn't include the cost of the GTX690, or the PC, or a few misc things like the keyboard.

I don't think the physical setup is all that complicated really - looks like the hydra is strapped to the rift for positional tracking. Most of the dashboard/controls stuff is just saitek flight-sim button-panels (this and the throttle from their yoke, you could map buttons and use the throttle from whatever HOTAS to the same effect). I'm guessing the other part of the hydra is taped to the main stick, though I'm not certain. I don't know about the pedals, though any should work.

The real magic/pain in the ass would be on the software side, making the hydra "play nice" as the rift's positional tracking and getting the sensitivity to a reasonable level, getting the stick to work out and all the buttons mapped and working, and then feeding that whole mess into the game. I guess this is where Tridef and OpenTrack come in, though I don't envy dealing with the setup there.
