Honestly I'd go for a pentium G4560 for the described use, an i5 is overkill.

In any case I wouldn't recommend the Ryzen here as they have no integrated graphics, so you have to buy a cheap GPU to take care of the display, which makes it less worth it.

So I'd go for something like this which is plenty powerful for office use, very small, and includes a nice 1080p 24" IPS monitor:

But if you prefer the core i5 it is possible if you go for this one which is pretty cheap (total 810€). The rest is compatible. You can also downsize the RAM and SSD sizes which are pretty overkill as well, if you want to lower the price tag

Samsung Syncmaster are usually pretty good, I'm currently using the older version of this one

Samsung S24F350, 24" PLS with freesync for £125. Negative is having no adjustments on the monitor stand though.

For mice suggestions check Rocket Jump Ninja Videos on youtube and his list.

For keyboard, I'd get one of the budget mechanical ones (not mechanical feeling) going for ~£30 if I couldn't afford a brand one.

Out of those three strictly I would get the last one, simply because it is a newer product. Also it is an IPS monitor - the "1ms" rating of the TNs is kind of pointless at 60hz, considering the compromises.

Personally I would get a similarly priced one with Freesync (adaptive sync) capability, for the future. Samsung has started selling the S24F350FHU and S24F352H here in Scandinavia - this one looks similar: https://www.amazon.co.uk/Samsung-24-Inch-Full-LED-Monitor/dp/B01BCF0006/ref=sr_1_1?s=computers&ie=UTF8&qid=1472844980&sr=1-1&keywords=S24F350H.
