Literally any Sennheiser. Pick the model you're willing to pay for.

I use these even though I feel like a smug asshole whenever I recommend them to someone.
The only headphones I've ever heard that beat these are the ~$1500 over ear Sennheisers at my university.

That's a difficult question because what is "best" will differ from one person to the next, regardless of price. That said custom IEMs, where they take a mould of your ear-canal and model the headphones off of that, are really popular on here, but they also come in all different shapes and sizes. I think that a good place to start if, say, you have just won the lottery, would be the Ultimate Ears UE 18 Pro and the JH Audio JH16 Pro.

And assuming you have won a lot of money, so much that you are just throwing it around, then it's probably worth picking up the top offerings from Sennheiser and AKG as well: the IE 800 and the K3003i respectively. I haven't listened to either, and probably never will, but they are highly regarded.

I wouldn't advocate for spending huge amounts of money on IEMs as the fear of loosing them or breaking them would likely restrict your ability to get the most out of them. Probably around $400 would be sufficient to get some superb IEMs.

Quick note, a search on Amazon.ca shows that Amazon Warehouse is selling a bunch of them for around the $425 USD ($550 CAD) mark, compared to Amazon.com with them at around ~$550 USD. One of the few times where it's cheaper in Canada than US. Definitely worth checking out :D

Mine is a pair of Sennheiser IE800 earphones. Something I really want but can't possibly justify spending my money on given their cost.
