This is a pretty decent setup, although I don't think you'll be able to plug three separate interfaces into the same Macbook. I believe it's possible, but will require some computer wizardry.

Now that I'm looking at the solos, there isn't a way to link them together, so that's out. You'll need to buy an interface with more inputs if you want to record multiple people in the same room. That's a better option, anyways.

The Heil PR40 is a pretty good mic, but I've found it makes the high-end frequencies sound a little crunchy. The Shure Beta 87 offers similar quality for less $$$. You can hear a comparison of a bunch of mics here.

Finally, it's great that you're investing money into good gear, but to get really professional sound, you'll need to do some post production, including noise removal, EQ, compression, and limiting. These are things you can learn yourself with a few hours of free online tutorials, or you can find yourself a podcast editor who has experience with mixing and mastering.

If you want that expensive audio sound, you'll probably need to go higher end with your mics and preamps. I don't think that's necessary though, as most listeners will be more than happy with the sound you'll get from the kind of setup you're looking at buying now.

You want a Shure BETA 87A. As it says on the tin, it's a great little supercardioid mic that works great for handheld scenarios.
