I was going to suggest the sonic boom baby monitor before I read your whole post. It does let you adjust the sensitivity, so you can calibrate it to only go off for a loud noise. The one thing I really hate about it is that once the signaler triggers, it keeps going until the noise stops or you unplug it. It really should have a 'Snooze' button or a trigger.

If you don't want the baby crying to wake you up, maybe a cheap webcam is better. This one will link to an app on your phone. You can have it notify you when it detects motion.
