The Thomas Keller book is nice, but he has some expert level techniques and crazy ingredients. I found Sous Vide at Home to be much more approachable:

I just checked this cook book that has a great Tikka Missala recipe, using greek yogurt. It has you cook it with the yogurt at 140f for 2 hours.
