Logically, chronologically. This would be close to release dates for the most part, but Early TNG has some hiccups that require a little bouncing around to maintain proper chronology, but nowhere near as bad as TOS. I use the Star Trek Chronology book (was originally written for Star Trek writers, so they could stop screwing up timelines) to keep my own viewing order correct to the official Star Trek timeline.

t;dr: Due to production hangups, release dates are not the intended chronology, so viewing by release date causes temporal disturbances

this will give you the highlights. though there are a lot of blanks spots before TOS.

there's also a 2 book series about the Eugenics Wars

I don't know if there's anything else written about Enterprise History.

This used to exist in book form. I had the book but I can't recall if Voyager was finished or if Enterprise was even out yet when it was published.

Edit: Found it. Just up to TNG though. I wish I knew what happened to my copy :(
