It's not as likely as you would be lead to believe, but I would not recommend leaving it powered on while you're away for an extended period of time. (Make a sandwich? Sure. Go to work for the day? Maybe not.)

Meanwhile, I'm using one of these sketchy SATA-to-SATA things since I need a short splitter to power two SSDs. I really should fix that.
If you need additional SATA power, you should use the molex power cables that came with your PSU and use molex to SATA adapters to power your SATA devices.
Edit: Also, you may need to do a paperclip test to see if the PSU is still functional. https://seasonic.com/troubleshooting/

Check your PSU manufacturer's website and see if they sell individual cables. If you don't care about aesthetics, this molex to SATA power adapter can make do as well if you have molex cables.

Not surprised on the power cables in the old system. You are halfway with the data cables.
Take a look inside your new system and see if the power cable that runs to your installed HDD has a second power coupling on it (they usually have two), that should give you to ability to hook up at least one of your extra HDDs. If your new PC has a modular PSU you can source another SATA power cable for it (recommend getting one made by the same mfr as your PSU). If it is not modular take a look for any 4-pin molex connectors and if available you can purchase a 4 Pin Molex to SATA Power Cable Adapter if needed. {no endorsement of products or sites implied}
