I have this gate and my dog who can almost open everything can’t open this. It’s not hard on my hands and is easy enough with one hand if you’re carrying stuff. Plus it looks nice.

Some baby gates come with female parts that screw in to the walls. The gate then attaches to these parts.

Which accommodates for thicker baseboards
We have a similar sort of house, and that was our plan ... but once ours became mobile she decided the playpen was obviously full of lava, so we had to revise.
We have gotten away with fairly minimal babyproofing so far, but some has been necessary because she is fast and it's just not realistic to keep our eyes glued to her 100% of the time.
We got these baby gates to block off the bottom of the stairs and the kitchen so she can roam in the main area. They work great with our wonky, oddly shaped doorframes because each "leg" can be adjusted separately.
We also did outlet covers and a latch on the space below the kitchen sink (we keep her out of the kitchen but cleaning products can be deadly so I didn't want to risk it in case she accidentally got in there).
Our biggest challenge is all the built in cabinets. Luckily most of them have doors that sort of stick shut and she hasn't figure out how to open yet (but my friend's toddler can, so it's only a matter of time). For the ones she can open, we've either moved anything dangerous inside of them or in one case just tied the double latches shut. I'm going to do whatever I can to avoid destroying all this lovely woodwork so I'm seeing a lot of "find new places to put things" in my future!
This one is great. It's very sturdy, and it's easily adjustable. It's 36" and has vertical bars so they can't climb. The bars are about 3" apart, so most dogs won't fit through.

Honestly I would just buy one of these put it down a couple steps and it should work just fine. It comes with wall cups that you mount to the wall so it won't slide so even if they push on it there will be no movement. The best part about this solution is that in like a year when they are old enough that you aren't worried about them you haven't done major modifications that need to be fixed.
I highly suggest this one. It works great and doesn't look awful. It also automatically closes (provided you've got the correct tension - too loose and it won't close all the way). Also, it's got vertical bars which are way harder to climb over for dogs than any with horizontal.
We've got two of them - one between the living room and the kitchen and one between the living room and our bedroom. This means that we can leave our bedroom door open, (our heating/venting doesn't work so well in the bedroom), and not have to worry about our dog getting into stuff.

It's a little pricey, but the walk-thru kind mean that you won't have to jump the gate every time. Usually you can install them in such a way that they won't interfere with the door to the room
