You should read his autobiography - The Apprentice: My Life in the Kitchen
Fascinating read about the old apprentice system and about his life.
Read his autobiography. It's great. People talk about how he comes into their restaurants and checks the trash first to see how much they are wasting and the book pretty much tells you it's from his upbringing through WWII.
Also goes into how he cooked for Charles De Gaulle (iirc) and how he was working for Howard Johnson's in the US.

peripherally related: Jacques Pépin (mentioned in the article) also writes about his experiences with Howard Johnson's in his book "The Apprentice"... IMO a really interesting look at how our modern sense of cooking evolved from the more traditional french cooking from a first person perspective.
