It's $35.97 on Steam and $35.47 for Switch, I don't know where you get your prices from. But yes it would be easily worth $60 considering most AAA games can't even compete with the deep gameplay and amounts of content

It's currently listed as 12/29 on Amazon, which is weird because usually if they don't have a release date for it then they list it as 12/31...surely it will be out sooner than that?
