Someone else mentioned this, but as far as I know the Hakka people originated in China and were essentially largely pushed out of the country (I forget why). Hakka people are dispersed throughout the world, and many have formed their own adaptations of what they know of Hakka cuisine adapted to where they currently live.

It's a Hakka cookbook! Check it out. I bought it because I'm obsessed with Chinese food, but had no idea at the time what Hakka really meant. This book goes through Hakka recipes from China (what would be those most 'authentic' or original), and further as they have been adapted in California, India, even Jamaica, etc.
