The canon Infinity Gauntlet story was Infinity Gauntlet, a six-issue event published in 1991, written by Jim Starlin and drawn by George Perez. The Infinity Gauntlet paperback collects those six issues, while the Infinity Gauntlet Omnibus collects all six issues, plus issues that led up to the event and tie-in issues from other series that took place during the event.
The Infinity Gauntlet Omnibus.
The size of this thing is impressive!
You should just read about it...
There are a bunch of tie-ins, but I've found that Thanos Quest and Infinity Gauntlet are sufficient. Unfortunately the omnibus, which collects all the tie-ins, is a bit pricy. However, both Thanos Quest and Infinity Gauntlet are on Marvel Unlimited.
Also, I would recommend watching [Marvel Explained's](Infinity Gauntlet Leadup: One Above All: http://youtu.be/GqgrZWwMvy4) videos. They'll give some more background on the obscure characters.
You could hold out/save up for The Infinity Gauntlet omnibus. It will be massive and will get you familiar with a lot of classic cosmic Marvel and the scale is universal. I only read the main event books through Marvel Digital Unlimited, and liked it a lot.
Edit: y'know, I'd recommend Annihilation too, which I always see recommended in cosmic Marvel threads but not necessarily big event threads. I think a lot/most of it can be read on MCU and they are releasing an omnibus and the Abnett/Lanning Guardians of the Galaxy trades too, right before the movie release.
Ugh, it looks like it went out of print, but I highly recommend it if you can grab it: https://www.amazon.com/gp/aw/d/078515468X/ref=mp_s_a_1_1?ie=UTF8&qid=1494002049&sr=8-1&pi=AC_SX236_SY340_QL65&keywords=infinity+gauntlet+omnibus&dpPl=1&dpID=51dvKIlWwmL&ref=plSrch
If you don't mind paying for it The Infinity Gauntlet Omnibus might be a good place to start.
It's the Infinity Gauntlet omnibus with all of the comics from the original story this is all based on. Here
Amazon has this listed:

So this amount of content is a bit overwhelming regarding to the event itself?
As previously stated, it really needs context beyond the 6-issue mini-series. To appreciate the story, I recommend the Omnibus. It may be cost-prohibitive, though. Infinity Gauntlet Omnibus https://www.amazon.com/dp/078515468X/ref=cm_sw_r_cp_apa_Dsexzb4JW61N6
With the original Infinity Gauntlet. Followed by Infinity War and Infinity Crusade. Also check out the Thanos 12 issue miniseries aka Thanos Redemption.
Also, I want to add, if you have the time or money you can pick up Marvel's The Infinity Gauntlet Omnibus. It's basically a collection of all of the comics that involve the Infinity Gems. As of now I probably won't spend on anything until the movie comes out and there is some kind of resemblance to the actual comics they claim are the basis for the movies and/or if I just want to read the originals after seeing the movie.
I see others have linked the TPB collection but they recently released an omnibus edition for the Infinity Gauntlet saga: http://www.amazon.com/Infinity-Gauntlet-Omnibus-Marvel-Comics/dp/078515468X
Much bigger with more issues surrounding the event but also much pricier. Worth it though, in my opinion.

This is actually the best way
If your looking for a really good cosmic read, you can't go wrong with the Infinity Gauntlet Omnibus.
This is a fantastic read. I was in your same mindset regarding the topic, did some research, and found that this is best. It's a collection of everything Thanos, the Infinity Gauntlet, and stories that tie into the fray. Truly an excellent read.

From here on out, it's mostly paperback.
This is where the Abnett/Lanning run starts, with the Drax mini leading into Annihilation. After their last bit, Annihilators: Earthfall, you can move to Hickman's Avengers / Infinity arc, along with Jason Aaron's Thanos Rising mini-series. The Guardians team moves into Bendis' Avengers Assemble and then their next eponymous ongoing, also by Bendis.
